Suggestions, please?

Life around here has returned to semi-normal....not that normal is so great.

I'm trying to decide what to make for Easter dinner. We always do a ham, but we just had ham and since I'm not really in the mood to do Easter at all, I thought if I mixed it up a bit, I'd get into it a little more. I have to cook for 12, so it has to be something not too expensive. At first I thought a beef tenderloin...but that would cost me a third of my weekly grocery budget! Now I'm thinking maybe a pork crown roast. Any thoughts or suggestions?

Sometimes for big family dinners, we have a huge pot of chicken and noodles, served over mashed potatoes. It's ridiculous, but tastes so good. For 12, I would stew two chickens, and you can buy frozen "grandmas noodles" at the store--you would need two big packages.

Roasted meats don't go as far as stews, but a pork roast dinner is always delicious and makes great gravy.

Chicken enchiladas, beans and rice, just like Jesus ate when He was in Mexico, visiting the Nephites!

How about a great big beef brisket, slow-roasted in the oven for about 8 or 10 hours, and basted with barbeque sauce? That's a Texas-style Easter dinner!

Leg O'Lamb. You can sometimes find them ridiculously cheap. Even the frozen ones are great. It's just about my favorite meal.

I'm with Verb on the big ole beef brisket. Ribs are always good. Lamb's good too -- I make a marinade of fresh mint, jalapeno, garlic, ginger, soy sauce, a little apricot jam, and a dash of water. It's sooo good.

We're having ham, scalloped potatoes, asparagus and either strawberry shortcake or coconut cake.

we're having ham covered in maple syrup from western MD and brown sugar then slow baked with dressing, potatoes, last years green beans, greens (gag), corn bread, eggs, and carrot raisin cake.

i wanted to make meatloaf, because i like it, but i got a request for ham. i'm with tree, make a soup/stew that you can stretch and feed a large group. if people bitch, then they should pitch in some money for the meal.
